Cars are 3D
Characters are layered sprites, e.g. torso, legs, head in separate sprites.
You'll have to guess the rest for yourself. No screens obviously.
Also, the script and missions are written by the GTA writers so no need to worry about that. Rockstar Leeds are just handling the code and stuff as far as I know.
